Baked Ranch Chicken: An Easy Dinner Win


Hey Reader,

Dinner doesn’t get much easier, or more flavorful, than this! We are making sheet pan ranch chicken thighs, my mom's cheesy baked rice, skillet green beans, and sugar balsamic strawberries over vanilla ice cream!

And The Weekend Spread, to help you relax with friends and family, featuring: sausage and cheese cornbread quiche, green bean potato salad, oatmeal chocolate chip cookie bars, and refreshing homemade lemonade.

On the Menu:

• Main: Baked Ranch Chicken - Toss everything on a pan, slide it into the oven, and the chicken comes out with golden, crispy skin, and juicy, tender meat.

• Sides: Mom’s Baked Cheesy Rice - The perfect side dish—creamy, flavorful, and incredibly easy to make, it’s the kind of recipe that feels like home.

• Sides: Skillet Green Beans - My go-to, all-time favorite side that's so easy to make in just one pan and is infused with garlic and lemon and just the right amount of red pepper.

•🍓Dessert: Balsamic Vinegar Strawberries - The delicious combination of sweet strawberries and the rich, complex flavor of balsamic vinegar, all served over some French vanilla ice cream is a surprising dessert your family will go crazy over.

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Breakfast: Sausage Cheese Cornbread Quiche - Perfect for a lazy weekend breakfast or brunch with two kinds of cheese, savory sausage, eggs, and tender cornbread, all baked together in this unexpected dish!
