Midweek Magic: Juicy Grilled Lemon Chicken


Hey Reader,

Taking advantage of fresh summer produce and grilling weather, this week we are making grilled lemon chicken with a spicy tomato cucumber salad, smoky grilled sweet potatoes, and boozy bourbon Arnold Palmers!

And The Weekend Spread, to help you relax with friends and family, featuring: crock pot beer cheese dip, summer zucchini bread, a lemon icebox pie, and a Southern cheese and pesto tomato pie!

On the Menu:

• Main: Grilled Lemon Chicken - Easy grilled lemon chicken is on my table just about every other week from Memorial Day straight through to Labor Day.

• Side: Grilled Sweet Potatoes - Smoky, slightly sweet, and seasoned just right, these grilled sweet potatoes are an easy summer side!

• Side: Spicy Cucumber Tomato Salad - Loaded with fresh cucumbers, tomatoes, onions, and creamy feta cheese tossed in a spicy, herb-packed dressing.

• Drink: Bourbon Arnold Palmer - Made with real homemade lemonade, good Southern sweet tea, and your favorite bourbon, it's like summer in every glass!

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Breakfast: Zucchini Bread - Anyone else have more zucchinis from your garden than you know what to do with? Made in one bowl, this zucchini bread is great to enjoy with coffee or tea for breakfast.

• Appetizer: Crock Pot Beer Cheese - Made in the crock pot, this dip is creamy, rich, loaded with ooey-gooey cheese, and the perfect addition to a veggie platter.

• Dessert: Classic Lemon Icebox Pie - If there is one dessert that says summer to me, it is a cold, creamy, tangy lemon icebox pie.

• Main: Southern Tomato Pie - Layers of ripe, juicy tomatoes, fresh basil pesto, sweet onion, and a bubbling golden cheese topping all baked in a flaky crust.
