The Best Roasted Pork Tenderloin Supper


Hey Reader,

This week we are making roasted pork tenderloin with a blueberry vinaigrette side salad, creamy Boursin mashed potatoes, and crock pot maple bacon green beans.

And The Weekend Spread, to help you relax with friends and family, featuring: pecan pie bars, big pigs in a blanket, and a sunshine fruit salad with scalloped potatoes and ham for brunch.

On the Menu:

• Main: Roasted Pork Tenderloin - This is the BEST Pork Tenderloin, perfectly seasoned, then roasted with butter, fresh parsley, and lemon zest in a cast-iron skillet!

• Salad: Blueberry Vinaigrette Side Salad - Fresh, bright blueberry flavor you can’t get from a bottle, and perfect over your favorite salad greens!

• Side: Boursin Mashed Potatoes - These herby potatoes taste like like someone took the simplest Southern comfort food and gave it a little glow-up.

• Side: Crock Pot Maple Bacon Green Beans - A true Southern comfort side that tastes like it cooked all day—but I don’t want to babysit a pot on the stove.

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Breakfast: Scalloped Potatoes And Ham - Thinly sliced potatoes and savory ham layered in a garlic-Parmesan sauce bake up perfectly golden and bubbly.

• Breakfast: Sunshine Fruit Salad - Pick your favorite seasonal fruit, pour on the honey cinnamon dressing, and you’re ready for a delicious dish perfect for serving any time of the year.
