The Easiest Crock Pot Recipe For Taco Night

Hey Reader,

This week we are making crock pot salsa chicken tacos with pinto beans, fresh avocado salsa, Mexican quinoa salad, and strawberry margaritas!

And The Weekend Spread, to help you relax with friends and family, featuring: chocolate chess pie, savory buffalo snack mix, and the best crispy air fryer chicken wings.

On the Menu:

• Main: Crock Pot Salsa Chicken - Toss 3 simple ingredients into a slow cooker and hours later you have the most flavorful chicken that's perfect for tacos, nachos, burrito bowls, and taco salads!

• Side: Instant Pot Pinto Beans - This no-soak recipe transforms dried beans into tender, creamy, smoky perfection in your pressure cooker.

• Side: Avocado Salsa - Loaded with fresh avocados, tomatoes, jalapeños, and onion, all tossed in a bright lime dressing, it's guacamole and salsa combined in one bite!

• Side: Mexican Quinoa Salad - Delicious and quick-to-make with quinoa, black beans, corn, and fresh veggies in a zesty homemade dressing!

• Cocktail: Fresh Strawberry Margaritas - This fruity, fresh drink has only five simple ingredients and tastes like summer!

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Dessert: Chocolate Chess Pie - No fancy equipment or complicated steps, just honest, old-fashioned baking

• Snack: Buffalo Snack Mix - The perfect balance between heat and crunch, this snack mix is spicy, savory, tangy, and slightly buttery.

• Main: Air Fryer Chicken Wings - No oil or marinating is needed for the BEST wings made in about 30 minutes.

The tomatoes are still coming in strong, the grill is out every night, and yet somehow there was football on the television this week. I am not ready to let go of summer, but I am absolutely ready for game day food. So this weekend I am splitting the difference. Something off the grill while the weather is still on our side, and a warm dip or two for whoever wanders in to watch the game. That is the beauty of...

Hey Reader! The first time I made this pie, I remember thinking how simple it was — just a few pantry staples and a whisk, and that was it. No fancy equipment or complicated steps, just honest, old-fashioned baking that reminds me why I love being in the kitchen. Everything cooks together in one basket; the potatoes turn golden and crispy, and the sausage gets those caramelized edges that make people ask for seconds. The second is my Air Fryer Salmon,...
