An Affordable Steakhouse Night at Home

Hey Reader,

This week we are making a steakhouse feast at home! We begin with a strawberry spinach salad, then follow that up with an easy marinated London broil, and classic classic steakhouse sides of twice-baked stuffed potatoes and crock pot creamed corn!

And celebrate mom this weekend with strawberry shortcake sheet cake, ham and cheese quiche for brunch, easy stuffed mushrooms to snack on, and a raspberry mimosa to sip on!

On the Menu:

• Main: Marinated London Broil - My favorite “looks fancy, cooks easy” dinners—just let the marinade do its thing, and you’ll have a tender, juicy steak packed with bold, savory goodness.

• Starter Salad: Strawberry Spinach Salad - Crisp dark spinach, jewel-bright berries, creamy crumbled feta, and the sweet crunch of candied pecans is the kind of salad that makes me happy.

• Side: Stuffed Baked Potatoes - Regular baked potatoes are turned into the BEST twice-baked, decedent, potatoes and are easier to make than you think.

• Side: Crock Pot Creamed Corn - You can make rich, creamy, and perfectly balanced steakhouse-style creamed corn at home for a fraction of the price.

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Brunch: Ham and Cheese Quiche - An easy to make, yet sophisticated brunch that's full of smokey ham, melted cheese, and tons of flavor.

• Appetizer: Stuffed Mushrooms - These creamy, garlicky stuffed mushrooms are easy, they bake beautifully, and they always disappear off the tray faster than anything else on the table.

• Dessert: Strawberry Shortcake Sheet Cake - A golden, biscuit-style shortcake baked in a sheet pan, topped with juicy macerated strawberries and a rich cream cheese whipped topping.

• Cocktail: Raspberry Mimosa - There’s something special about a pretty drink made with fruit and bubbles—make Mom's heart flutter with every bubbly sip.

Green Bean Salad

Hey Reader! This is the salad I make every single time fresh green beans show up at the farmers' market. Crisp blanched beans, sweet grape tomatoes, Vidalia onion, and creamy feta — all tossed in a bright lemon Dijon dressing that gets better the longer it sits. Ready in 20 minutes. Perfect for potlucks, cookouts, and everything in between. Make it the night before, and it does all the work for you. Fresh Green Bean Salad - Y'all, It's So Good!
