When it's too hot to cook, I love batch-cooking for easy meal-prep so I don't have to prepare a new meal every single day!

These are my favorite recipes that you can set-and-forget in the slow cooker, can be prepped ahead of time and thrown in the oven when needed, along with versatile protein options that you can pile on a salad or pasta, in a sandwich or taco, or serve up with some simple sides.

Meal Prep—Southern Style

Crock Pot Mexican Shredded Beef

This simple recipe inspired by beef Barbacoa is fantastic for tacos, nachos, salads, and so much more!

Grilled Lemon Chicken

Make a double batch on Sunday and use the leftovers for chicken salad and pasta all week.

Southern Soul Chili

I can eat chili all year long, and my award-winning chili is even better the next day and reheats beautifully!

Crock Pot BBQ Beef Roast
