The Secret To The Juiciest Chicken Thighs

Hey Reader,

This week we are making the juiciest air fryer chicken thighs, deviled egg potato salad, easy roasted broccoli, and balsamic marinated strawberries for dessert.

And The Weekend Spread, to help you relax with friends and family, featuring: baked cheese sticks with marinara, sausage egg and cheese breakfast cups, homemade meatballs, and quick strawberry jam.

On the Menu:

• Main: Air Fryer Chicken Thighs - With just a handful of simple ingredients, you’ll get perfectly crisp, golden skin and tender, juicy chicken, all in under 30 minutes!

• Side: Deviled Egg Potato Salad - This is my Mama's recipe — creamy and tangy, with Yukon Gold potatoes, Duke's mayo, yellow mustard, and hard-boiled eggs.

• Side: Easy Roasted Broccoli - Fresh broccoli, roasted with olive oil, nutty Parmesan cheese, and crunchy homemade breadcrumbs might just be the best, most simple side dish ever!

• Dessert: Balsamic Strawberries - The delicious combination of sweet strawberries and the rich, complex flavor of balsamic vinegar, all served over some French vanilla ice cream, is a surprising dessert your family will go crazy over.

The Weekend Spread:

Not a menu, but some of my favorite seasonal recipes to enjoy all weekend long.

• Breakfast: Sausage, Egg & Cheese Cups - Made in just 30 minutes, you can stock your fridge or freezer with a nourishing grab-and-go breakfast or quick protein-rich snack!

• Appetizer: Baked Cheese Sticks With Marinara - Crispy and crunchy with just the right amount of seasoning and all of the classic flavors found in restaurant-style mozzarella sticks but without heavy breading.

• Summer Fruit Jam: Quick Strawberry Jam - Whether you spread it on toast, dollop it on vanilla ice cream, or swirl it into oatmeal, this jam is sure to become a staple in your kitchen.

• Main: Homemade Meatballs - These meatballs are tender and juicy and are perfect served over pasta, as an appetizer, or in subs.

Southern Corn Salad

Hey Reader! Fresh, crisp salads have always been my thing, and once sweet corn shows up at the market, I know a good one is coming. Here is the twist. I stopped grilling my corn for this salad. A dry cast-iron skillet with no oil chars it more deeply than the grill ever did, and there is not a single reason to step outside for it. Then a splash of buttermilk in the dressing loosens everything up and gives it that real Southern tang. This is the side dish my people call dibs on before the bowl...
